In recent times not only state bread factories offer their products, but there is a large number of private bakeries that have entered the market. Furthermore, many supermarkets have their own bakeries to offer customers fresh products. Therefore, the baking industry is quite competitive with businesses ranging from corner stores to large-scale retail chains. In recent years there has been a growing focus on healthy and organic food. Furthermore, there are growing concerns about food safety, particularly the use of pesticides and other chemicals, and the large number of preservatives and stabilizers used by manufacturing industries. This results in a shift in consumer purchasing behavior towards purchasing healthier and organic products. Motivation“Ukr Eco Khlib” is a medium-sized bread manufacturer offering healthy foods: wholemeal baked goods made from sprouted wheat, without flour and yeast. The production technology is considered the company's competitive advantage as it allows all vitamins, ferments and microelements to be preserved. The company has experience in producing crispbread, different types of bread and muffins with various fillings which are highly popular, so that the company can enjoy customer loyalty. The raw materials used are cereals, sugar, dried apricots cut in half, plums, nuts, raisins, salt, pepper, spices. The company sometimes (often in the spring months) encounters a loss of productivity for the following reasons: delays in supply, shortage of supply. Taking into account seasonal fluctuations in demand, inventories should be better controlled. Sometimes equipment failures occur which lead to low utilization and combined with the design capacity of the machines not being met leads to losses.
